Covid, Lockdown, Sedentary Lifestyle & Stress. All factors which contribute to weight gain, especially fat gain. So here's a perfect dinner recipe to keep your weight in check.

 100 g Black Beans or Kidney Beans (soaked overnight & boiled)
 30 g Chopped & Roasted Capsicum
 1 tbsp Low Fat Cheese
 1 tsp Chilli Sauce
 1 qt Whole Grain Tortilla
 20 g Baby Spinach
 ½ tsp Salt

Place beans in a bowl. Use a fork to coarsely mash. Add the capsicum, cheese and chilli sauce and stir to combine.

Preheat tawa. Place tortilla on a work surface. Spread the bean mixture over 1 half of the tortilla. Top with spinach leaves. Fold to enclose.

Spray the tortilla lightly with oil and toast until golden.

Serve with extra spinach leaves.
