Easy Kale Salad

 50 g Kale
 10 oz Vinegar
 1 g Salt
 1 tsp Lemon Juice

Remove stalks from the kale and rip into bite-sized pieces, then add to a large bowl. (Don’t be afraid to use a large bunch of kale, it will end up shrinking!).

Juice the lemon and add half of the juice to the bowl along with a drizzle of olive oil and salt. Massage the kale until it starts to degrade and wilt, for about 2 Minutes .

In a small bowl combine the other half of the lemon juice with the honey, pepper, and olive oil. Be sure to whisk it together.

Pour the dressing over the kale and add the sunflower seeds, walnuts, and dried cherries (optional). Toss the salad and enjoy!
